Wasted beer is beer you had to buy on top of the beer you sold, so it costs you more than the waste percentage sounds like it should.
A half barrel holds 124 sixteen ounce pints. At 20% waste only 99 of them reach a customer, so you buy extra kegs just to cover the foam. Bottoms Up fills from the bottom of the cup, so there is no pour side foam loss and all 124 pints go in a glass.

What those extra kegs cost you$882
Per month, at $175 a keg. Spread across the pints you sell, that is $0.35 a pint. The yearly figure on the page is this times twelve.
We do not count line cleaning, comps, or the pints lost changing a keg. Those are real, we just cannot put a number on yours.
